We all have those days where we need something quick to eat and often end up grabbing a refined carb rich breakfast, such as a bagel with cream cheese, which often leaves us feeling bloated and tired for the rest of the day.
Breakfast is an important part of the day as you are breaking your fast from the night and ideally it should be something nutritious.
I love this recipe as it's super simple, can be made in advance and stored in the fridge for easy grab-and-go breakfast or snack.
The base is made of four simple ingredients and the topping options are endless!
MANGOS soothe the stomach and intestinal lining, alleviates CONSTIPATION and help CALM the central NERVOUS SYSTEM (super important to activate the para-sympathetic side of the nervous system, which is the rest-and-digest side, as opposed to sympathetic side which is the fight-or-flight side often associated with a state of stress)
COCONUT milk contains an especially beneficial form of fat, has antiviral and antibacterial properties to kill off pathogens that often cause BLOATING, GAS, THYROID issues and more
CHIA seeds are rich in FIBER and can help bind on to toxins and carry them out of the body through your poop. They can be really helpful for someone suffering from CONSTIPATION but ensure to have LOTS of water to move things along the digestive tract, otherwise you could end up with the opposite problem!
Recipe
(gluten-free, dairy-free, refined sugar-free, egg free, vegan, vegetarian)
Makes 12 servings
Ingredients
1 Mango
1 can Coconut Milk (lite)
1/4C Chia seeds
2-3 tbsp 100% Maple Syrup
Step 1 - Blend mango and put it at base of two mason jars
Step 2 - Blend can of coconut milk with chia seeds and maple syrup
Step 3 - Pour chia mixture on top of mango
Step 4 - Put in fridge overnight (or for a few hours) to set
Optional toppings: hemp seeds, unsweetened coconut flakes, diced strawberries or anything else you may desire
