You know when your bananas get all those brown spots on them...well that is the PERFECT time to make a Banana Bread (the bananas will be extra sweet and mushy)! This bread is free of gluten, dairy, processed sugar and eggs and is suitable for vegan and vegetarian diets as well.
I like to use 100% real Maple Syrup in my baking recipes. Maple Syrup is rich in minerals such as zinc and manganese, which serve as antioxidants, combating the effects of free radicals and support a healthy immune system.
It will leave your whole house smelling so amazing too!!!
(Free of gluten, dairy, eggs, refined sugar)
Makes 1 loaf
3 Bananas (with brown spots)
2 cups All-purpose Gluten-free Flour Blend - I used Bob's Red Mill
1 tbsp Baking Powder
2 tbsp Flax Seeds
5 tbsp Water
1/4 cup 100% Maple Syrup
1/4 cup Almond Butter (or another favorite nut butter)
1/4 cup Coconut Oil (melted)
1/2 cup Oat Milk (or your favorite nut milk)
1/3 cup Chocolate Chips (+extra for topping if desired) - I used Enjoy Life Semi-Sweet Chocolate Chips
1/3 cup Walnuts (+extra for topping if desired)
1/3 cup Dried Cranberries (chopped)
Step 1 - Mash Bananas well with a fork or a potato masher. Mix in flour, baking powder and cinnamon.
Step 2 - In a separate small bowl, combine ground flax seeds with water. Let sit for 5 or so mins until it becomes jelly like.
Step 3 - In a separate bowl, combine maple syrup, almond butter, coconut oil and oat milk. Mix well. Add this mixture to your banana mixture.
Step 4 - Add in flax "egg" from Step 2. If it is not jelly yet, wait a few minutes and then add it in. Mix well.
Step 5 - Add in the chocolate chips, walnuts and dried cranberries (if using).
Step 6 - Pour dough into a parchment lined bread baking pan. Top with extra chocolate chips and walnuts (if using). Bake at 375F for 40 minutes. Let cool fully before removing from pan. Enjoy!
